If you start Pages on an iPad, you may get stuck without any controls and no obvious way out.
If you are in landscape mode, the simple trick is to rotate the iPad 90 degrees to portrait mode, and the controls will appear.

I still don't understand why people get stuck on this. It was demonstrated in Apple's original demo in January, it's in the guided tour on their website, and the manual that's included (in Pages format) with every copy of the software details the issue, too. I'm not certain what more Apple could have done.
